ARTICHOKES

What image comes to mind at the word "artichoke"? Expensive jars of a marinated vegetable? Tubers like knobby potatoes? The sensuous delight of dipping succulent leaf-like scales into melted butter and scraping thick flesh away with your teeth?

As a gardener, do you see a maze of monster weeds with edible roots, a bed of ornamental thistles, a deceptively demure cushion of mint-like foliage?

In fact there are three vegetables known as artichoke, all interesting and useful plants for the home garden. Their edible parts add pleasantly subtle, delicate flavors to meals. The three types of artichokes are:
